Other groceries are required. The pack supplies the tortillas, not three complete meals by itself. This is three dinners, not a complete week.

Reference product: Old El Paso 6-inch Flour Tortillas, 20 ct. Set aside three separate groups: tortillas 1–8 for enchiladas, 9–16 for folded quesadillas, and 17–20 for strips. The quesadillas use one folded tortilla each, not two stacked tortillas.

Bean & Cheese Enchiladas

8 six-inch flour tortillas from the 20-count pack
1 can (16oz) refried beans, about 2 cups
8oz shredded cheddar, about 2 cups, divided
2 cups prepared mild red enchilada sauce, divided

Method
Heat oven to 375°F. Spread 1/2 cup sauce in a 9x13-inch dish. Warm the 8 tortillas per package until pliable.
Divide beans and 1 cup cheese among tortillas: about 1/4 cup beans and 2 tablespoons cheese each. Roll and place seam-down in the dish.
Spoon remaining 1 1/2 cups sauce over all rolls; scatter remaining 1 cup cheese. Bake about 20–25 minutes, until the center reaches 165°F.
Let stand 5 minutes, then serve 2 enchiladas per person. Keep the other 12 tortillas unused and sealed for the other two recipes.
Safety check
Meatless casserole still needs a 165°F center; hot sauce/cheese at the edge is insufficient.
Family options
Use mild prepared sauce.
Use the same quantity of Monterey Jack instead of cheddar.
Cut each roll into smaller pieces after baking.

Smaller tortillas, eight rolls, less filling/cheese/sauce, no scallions/cilantro. Heat and rolling method retained; doneness temperature added. Not the source's original quantities.
Estimate allows prep/scrambling and four two-at-a-time skillet batches at 4–6 minutes each; not an all-at-once promise.

Method
Beat eggs with salt. Melt butter in a skillet over medium-low; scramble, stirring, until set with no liquid egg and 160°F. Transfer to a bowl.
Put one-eighth of the cooked eggs and 1/4 cup cheese on one half of each tortilla. Fold each once; do not use a second tortilla as a lid.
Toast two folded quesadillas at a time in the skillet over medium, about 2–3 minutes per side, until crisp and cheese melts; reduce heat if browning fast.
Serve 2 folded quesadillas per person with 2 tablespoons salsa. Serve promptly; if holding batches, keep them at least 140°F.

Eggs are cooked before folding. Use clean utensils for cooked filling; leftovers reheat to 165°F.
Family options
Keep salsa in a dipping bowl.
Use equal-weight Monterey Jack instead of cheddar.
Cut each folded quesadilla into two wedges.
Source and adaptation
No sausage; eight eggs and eight six-inch folded tortillas. Butter replaces sausage fat. Batch allowance and smaller portions are ours; source supports pre-cook/fold/toast sequence.
Stovetop cooked-chicken adaptation: preheat, strip cutting, 10–12-minute strip bake and soup heating in parallel. Not the source's raw-chicken slow-cooker method.

2 cups shredded fully cooked chicken (about 10oz)
4 cups chicken broth
1 can (14.5oz) diced tomatoes, undrained
1 can (10oz) mild red enchilada sauce
1 cup frozen corn

Method
Heat oven to 350°F. Brush both sides of 4 tortillas with the oil. Halve, then cut into 1/2-inch strips; spread in one layer on a large baking sheet.
Bake strips 10–12 minutes until golden and crisp, checking early. Meanwhile combine broth, tomatoes, enchilada sauce and corn in a saucepan; bring to a simmer.
Add fully cooked shredded chicken. Simmer about 10 minutes, stirring, until chicken and soup reach 165°F; add time if needed, not raw chicken.
Divide hot soup among 4 bowls. Divide all crisp strips evenly and add only at serving so they stay crisp. No whole tortillas remain.

Already-cooked chicken only. Get it fresh for this meal or freeze promptly; do not hold it for an unspecified week. Soup reheats to 165°F.

Keep strips in a bowl until each person serves.

Four smaller flour tortillas replace three burrito tortillas; simplified stovetop soup uses cooked chicken, more broth/corn and omits onion/chiles/spices. Source supports strip technique, not this new total time.
Wash hands and equipment; keep raw eggs separate from ready-to-eat ingredients. Use a food thermometer, not color, to check doneness.
Cook the eggs to 160°F. Heat the enchilada center and the chicken soup to 165°F. Keep hot batches at least 140°F if holding before serving.
Refrigerate perishable food promptly, within 2 hours. Buy cooked chicken fresh for soup night or freeze promptly and thaw safely in the refrigerator; do not assume it lasts across an unspecified week.
Store unused tortillas resealed according to actual pack directions; freeze if needed. No promised shelf life. Reheat leftovers to 165°F.
