Turkey meatball pasta

Turkey meatballs in a quick tomato sauce over spaghetti. Amounts below are scaled to four.
Ingredients
Family of four. Serves 4. Amounts doubled from the two-serving recipe.
- 16 oz ground turkey
- 12 oz gluten-free spaghetti
- 3 cups canned crushed tomatoes
- 4 cloves garlic
- 4 tbsp olive oil
- 2 tsp dried basil
- 1 tsp salt
- 0.5 tsp black pepper
Method
- 1. Bring a large pot of salted water to a boil. Cook gluten-free spaghetti according to package directions. Drain and set aside.
- 2. While pasta cooks, in a bowl combine ground turkey, 2 minced garlic cloves, 1 tsp basil, 1/2 tsp salt, and pepper. Mix gently and form into 20 small meatballs. Amounts are doubled from the two-serving recipe.
- 3. Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, for 6-8 minutes until browned and cooked through.
- 4. Remove meatballs to a plate. Add remaining minced garlic to skillet and cook for 30 seconds.
- 5. Add crushed tomatoes, remaining 1 tsp basil, and 1/2 tsp salt. Simmer for 3 minutes.
- 6. Return meatballs to the sauce, stir, and cook for 1 minute. Serve sauce and meatballs over the drained spaghetti.
